What are easy, whole-food lunch ideas without processed ingredients?

I’ve been trying to eat more whole foods and cut out processed stuff, but I keep hitting a wall with lunch. My go-to used to be a sandwich with deli meat, but now I’m realizing that even the “natural” brands have a lot of additives. I’m not sure what to prep instead that’s actually convenient and satisfying.

I swapped the sandwich for a grain bowl most days. Cook a big batch of quinoa or brown rice, roast a tray of veg, add beans or lentils, and a squeeze of lemon or tahini. It feels like real food and you can prep it once and reuse all week.

Mason jar salads sounded great, but soggy greens suck. I started making a chickpea salad on Sunday and portioning it with greens and cucumber for quick noon plates. Also I kept thinking about container labels and whether they matter.

Sometimes I go with tuna and yogurt, chopped celery and apple on greens or in a wrap. It seems to work, but I’m not sure it’s the perfect fix.
