What quick whole foods lunch ideas work in a busy workday?

I’ve been trying to stick to a whole foods diet, but I keep hitting a wall with lunch. I can do eggs or oatmeal for breakfast and cook a decent dinner, but by midday I’m so rushed that I just grab a packaged snack bar or some crackers, which totally defeats the purpose. How do you all manage to put together a quick, actual whole food meal in the middle of a busy workday?

Batch cooking on Sundays changed lunch for me. I cook a big pot of quinoa, roast veggies, and bake chicken or tofu, then portion into containers. At noon I just reheat for a minute or two and it tastes like a real meal, not a snack bar.

I keep a few fast combos in the fridge: a greens bowl with canned fish, avocado, and lemon; or lentils with roasted veggies and a little feta. Not fancy, but real food that you can grab in minutes.

Sometimes I wonder if the real wall is the energy slump. Even with prep I still reach for crackers during a deadline sprint. Maybe it’s habit or appetite fighting back.
