How about lunch ideas that replace deli sandwiches?

I’ve been trying to eat more whole foods and cut out processed stuff, but I keep hitting a wall with lunch. My go-to used to be a sandwich with deli meat, but now I’m realizing that even the “natural” brands have a lot of additives. I’m not sure what to prep instead that’s actually convenient and satisfying.

I started batch cooking on Sundays: roast a tray of veggies, simmer a pot of lentils, and have grains ready in the fridge. Lunch feels easier when I grab lentils over quinoa with the roasted veg and a dollop of yogurt or tahini.

I still miss the old sandwich routine, and sometimes I grab whatever’s fast and end up with something processed anyway. The bowl tactic is better for hunger and energy, but it’s not always satisfying in the moment.

Do you still want something you can grab on the go, or are you open to reheating at work?

I tried falafel bowls with cucumber and tomatoes and lemon tahini, but the prep blew up when I realized I didn’t stock tahini consistently, so I dropped that plan for now.
