What are quick whole-food lunch ideas for a busy work week?

I've been trying to eat more whole foods and cut out processed stuff, but I'm really struggling with what to do for quick lunches during my work week. Everything I can grab easily seems to have some kind of additive or preservative, and my old standbys like sandwiches with deli meat don't feel like they fit this approach anymore.

I get the struggle. I started by batch cooking on Sundays: a big pot of quinoa or brown rice, roasted veggies, and a protein like lentils or chickpeas. I portion into grab-and-go containers and top with a drizzle of olive oil and lemon. It’s not glamorous, but it’s real food you can eat at work. No deli meat, no mystery ingredients.

One week I tried bowls with quinoa, black beans, avocado, salsa, and greens. It kept well for a few days, and I could just grab it. The downside was I still craved something crunchy, so I added a handful of almonds. Took a bit to get the ratio right, and I rinsed canned beans to cut sodium.

Would you be okay with something you can eat cold or at room temp, or do you need to heat it up?

I keep thinking the problem might be time gaps between leaving home and lunch. I tried shopping for pre-chopped veggies, which helped, but it felt like I was paying for speed. Sometimes I just forget, and then I end up with a boring toast. Not sure if the real blocker is pantry setup or motivation.
